"This recipe was shared with us from some dear friends. My husband and her husband served in the same National Guard unit in Utah. We spent a Thanksgiving with them and this was one of the outstanding salads she prepared."

  • 1 (3 ounce) envelope unflavored gelatin
  • 14 cup cold water
  • 14 cup hot water
  • 1 cup walnuts, chopped
  • 8 ounces cream cheese, softened
  • 1 tablespoon lemon juice
  • 12 cup sugar
  • 1 (20 ounce) can sweetened crushed pineapple
  • 8 ounces Cool Whip

directions

  • Dissolve gelatin in cold water.
  • Add hot water.
  • Cream the cream cheese, lemon juice and sugar.
  • Drain pineapple. Add to cheese mixture. Stir in gelatin.
  • Add walnuts.
  • Let stand 10 minutes then fold in cool whip.
  • Refrigerate until time to serve.

  1. This salad fell a bit flat for us. I think mostly it was the texture which seemed cloud-like (very airy). I thought with the addition of the cream cheese it would have a more substantial flavor and texture.

  2. Oh, my this is so wonderful. I think that I could eat the whole bowl myself, and it makes a big bowl. I love the combination of the cream cheese and Cool Whip. The walnuts are a good addition to the salad, too, especially since walnuts are a lot less expensive in my area than pecans. This would be wonderful for Thanksgving or Christmas dinner. It would also make a nice dish to take for a pot luck dinner, I will keep this in mind for that.

  3. Yes! This is a nice salad or dessert! Hubby doesn't care for cream cheese but he didn't know it in this recipe and my little secret is that most of the time I can sneak in a little cream cheese or sour cream and he doesn't know it. He loved this! Will make again.Thanks for posting!

  4. I read about this in a previous post and was interested to try it! This reminded me of a "white" Watergate salad (same texture). It was refreshing and not too heavy or sweet, since it didn't call for pudding or flav. Jello. I used non fat cream cheese and Dream Whip and it was plenty rich for me. It made a nice ending to our fajitas and rice. Thanks for posting, Chef #278118!Roxygirl

<p>I live on the Oregon Coast with husband and four boys. I am able to stay at home with them and hold down the fort. I have many cookbooks which I enjoy searching through for our family favorites. I recently started working as a home health care worker for seniors with disabilities (which I absolutely love), I love to quilt, crochet, bake, read, garden, watch the rain (which happens quite frequently here) and play with my kids. <br /><br />I am passionate about canning, canning, canning. I will admit I like admiring all the hard work after the jars are placed on the shelves. hehee I am all for if I can make it myself I will. Yes...I am frugal. I also love to bake. Especially homemade bread. I will continue to do so until arthritis takes over my hands. Then I will use more of the mixer for the kneading part. <br />All recipes I post are ones I've made and are our famiy favorites. <br /><br />I love pretty flowers. These flowers grace our yard every year.
