Easy Overnight Breakfast Casserole

This is one of the best breakfast casseroles that we’ve made. It has all the flavors of an Egg McMuffin in casserole form. This casserole is assembled in minutes the night before and baked when you are ready. Chicken Legs loved this.He wanted me to contact McDonald’s and get them to add it to their menu! I agreed that this was great. I am not a fan of McMuffins, but I loved this casserole. Chicken Legs added syrup to his second piece to make this a McGriddle Casserole.

How to Make McMuffin Breakfast Casserole

This casserole is super easy to make. Start with cutting some english muffins and canadian bacon into pieces. Layer half of the muffins, bacon, and cheese in a baking dish. Repeat the layers. Whisk together eggs, milk, salt, and pepper. Pour the egg mixture over the muffins. Cover the casserole with plastic wrap and refrigerate overnight. Bake the casserole the next morning.

  • I usedBays English Muffins– my favorite. They are found in the refrigerated section of the grocery store, near the milk.
  • Do I have to refrigerate this casserole overnight? No. If you are short on time you can make this and refrigerate it as long as possible or not at all. Refrigerating the casserole overnight helps soften the english muffins.
  • Can I freeze McMuffin Casserole? Yes! You can assemble the casserole and freeze it unbaked for later. When you are ready to bake it, thaw it out completely in the refrigerator and bake as directed.
  • Do I have to use Candian bacon? No. You can use ham, bacon or sausage if you prefer.
  • Can I double the recipe? Yes! You can easily double the recipe and bake it in a 9×13-inch dish. You may need to increase the baking time 5 or 10 minutes.
