Sooo yummy! Perfect, (and quick!) comfort food for cooler weather. I used ditalini pasta instead of elbows, and I added about 1 cup more because I wanted it to be more like a pasta dish instead of soup-like. It turned out great and plenty of leftovers! Will definitely add this to my rotation this winter.

This soup is delicious. The first time I made it I added carrots with the onions and beef and used leftover tomato soup instead of sauce but cut out some water. The second time I didn’t have cream cheese and used marscapone instead. Both times it tasted great. It’s a great recipe to use up leftover pasta, sauce and tomato soup.

This recipe is soooo good! The broth is creamy…and the noodles…yummy! Followed recipe exactly with the exception of adding a little more salt for our taste. Recipe looks delicious but I’m looking for clarification on the “spaghetti sauce” ingredient. Is that supposed to be jarred pasta sauce or a can of plain tomato sauce? Thanks!

I doubled the meat (2 very athletic kiddos in the house) and used reduced fat cream cheese and gluten free pasta. This was a fantabulous soup. No I didn't make it exactly as written, but the changes didn't make a difference to the flavors. Both kids told me this is a make again. So it was a big hit!

What brand of spaghetti sauce do you use?

  63. Momma Cyd says:

Any spaghetti sauce will do. We have used Raos, and all the way down to store brands. They all taste great.

  64. Michelle says:

Delicious! I added some fire roasted peppers and used fire roasted diced tomatoes. Next time I think I will cook the pasta on the side rather than directly in the soup as it did get a little too soft. Thank you for the recipe! Will definitely add to my soup rotation.

Creamy Ground Beef and Macaroni Tomato Soup Recipe (32)

  65. Trisha Halverson says:

I made this for a potluck Christmas lunch party, and it was the only soup to get devoured completely! I will definitely be making again. It was hearty and delicious! Great recipe!

Creamy Ground Beef and Macaroni Tomato Soup Recipe (33)

  66. Jenn says:

Would sour cream work in place of cream cheese?

  67. Momma Cyd says:

You can substitute sour cream for cream cheese in recipes. The taste will be different since they don't taste the same. But the soup will still be delicious.

  68. Lisa in Toronto says:

Really really like this recipe. My family all agreed that it was delicious. Simple ingredients and comes together pretty quickly as a one-pot meal. Some modifications based on what I had available:- I used homemade beef-tomato stock instead of chicken stock- I used herbed cream cheese instead of plain- I threw in 2 full cups of noodles and would consider 2 1/2 cups next time- I did not add the can of tomatoes (because my stock was already tomato-flavoured)Will happily make this again!

  69. Momma Cyd says:

Thanks for sharing the modifications you made. It's always great to know in case viewers don't have every ingredient.

FAQs

How do you thicken creamy tomato soup? ›

Add flour or cornflour

Put a tablespoon of either into a small bowl and stir in 2-3 tbsp of the soup until you have a smooth mixture. Stir this back into the soup and bring it to a simmer. Cook for a few minutes to allow the starch granules to burst to thicken, and to cook out any flour flavour.

How do you add cream to tomato soup without curdling? ›

Temper the cream first. Add a liitle bit of tomato sauce at a time to the cream until it is warm and then add it all back into the tomato sauce. This will keep it from curdling.

Can you add milk to soup to make it creamy? ›

Milk or Half-and-Half: This is the other magical ingredient that turns your homemade chicken noodle soup into the creamiest soup ever.

What's the difference between creamy tomato soup and tomato soup? ›

But what about cream of tomato soup? Any “cream of” soup, tomato included, is pureed like a normal soup but then goes through a “creaming” process, wherein cream is added to the mixture. Cream of tomato soup is actually cooked at a much lower temperature than normal tomato soup.

When to add cream to soup? ›

If you started the soup with broth, stock or water, I would wait until the end to add the cream. You can warm the cream, or “temper” it, which is what I do. Take about half a cup of the hot broth and slowly add your cream to that, stirring constantly.

What is the best thickener for soup? ›

Add Flour Or Cornstarch

You can thicken soup by adding flour, cornstarch, or another starchy substitute. For the best results, never add flour or cornstarch directly to your soup. If you do, it will clump up on top. Instead, ladle a small amount of broth into a separate bowl and let it cool.

What happens when you put milk in tomato soup? ›

Tomatoes are very acidic and milk or cream is added to them, curdling can occur. Curdling will be more likely to happen when the ratio of acid to cream increases or when mixing a cold and hot mixture. To thwart the curdling tendency, changing procedures will render a smooth tomato soup.

How do you add cream to pasta without curdling it? ›

Follow the below tips to avoid curdling of cream:
  1. Always use cream which is at room temperature.
  2. Beat the cream before adding it to any dish.
  3. Bring the flame to lowest possible when adding cream.
  4. Add cream with one hand and keep stirring the dish.

What to put in tomato soup to make it taste better? ›

Roast the onions and garlic before adding the tomato base can enhance the flavor, and adding a splash of balsamic vinegar or a drizzle of olive oil can also provide depth. You can experiment with adding a splash of lemon juice or a pinch of sugar to balance the acidity of the tomatoes.

What makes soup more creamy? ›

A roux is a classic technique for thickening soups and sauces, and simply refers to the use of fat and flour together—in this case, butter and flour! Whole milk adds plenty of creaminess, too, and voila! A lovely rich and creamy chicken soup.

What cream is best for soup? ›

There's classic heavy cream, of course, which makes soups like our creamy tomato Parm soup and our cream of broccoli soup extra delicious. Another great (and non-dairy) option is coconut milk.

How do you keep milk from curdling in cream of tomato soup? ›

Stabilize with a Starch

Starches like flour or cornstarch help stabilize the milk emulsion. This will prevent it from separating. A common technique is to thicken your sauce or soup with roux before adding the milk. This changes the makeup of the liquid and prevents curdling.

Should you remove tomato skins for soup? ›

If you've ever made a tomato soup and fished out some tomato skin, you know it's not always the most appealing texture. Sometimes, you want the smoothest, silkiest texture for a sauce or soup possible, and for those cases, it is ideal to use peeled tomatoes.

Which canned tomatoes are best for soup? ›

This variety of tomato is most often associated with Italian tomato sauces, but they work well in pretty much anything you might need tomatoes for, like soups, chili and curries. D.O.P. and "San Marzano" are the two most readily available kinds of whole peeled tomatoes in grocery stores.

Does tomato soup taste better with water or milk? ›

The standard direction for a can of condensed Tomato Soup is to put the condensed soup in a saucepan, fill the can with water, add the water to the pan, stir, and heat just to the point of simmer. BUT. It's MUCH better with Milk, which makes it a creamy tomato soup, a bit more like a tomato bisque.

How do you thicken creamy tomato sauce? ›

Use Flour and Water

Combine 2 tablespoons flour with every 1/4 cup cold water and whisk until smooth. Add the mixture to your sauce over medium heat, and continue to stir and cook until you've reached your desired consistency.

How do you fix soupy tomato sauce? ›

Cornstarch: Make a slurry of half water, half cornstarch and whisk until smooth. Cornstarch is a powerful thickener, so start by whisking in no more than 1 tablespoon of the mixture per 2 cups of simmering sauce; stir and simmer for 2 minutes, check the thickness, and repeat with more slurry as needed.

Is it better to thicken soup with flour or cornstarch? ›

It's important to note that cornstarch has twice the thickening power of flour. If you need to substitute cornstarch to thicken liquid in a recipe that calls for ¼ cup (four tablespoons) flour, you only need two tablespoons cornstarch.

Why does creamy soup turn watery? ›

Another reason that cream soups can become watery is that the vegetables or other ingredients in the soup continue to emit moisture through the cooking process. Mushrooms and potatoes are prime examples of vegetables that continue to “weep,” or lose moisture as they cook further, especially from a raw state.
